Amritsari Chole Kulcha Lachha Pyaz Recipe Ingredients

1 Cup Chole (Chickpea)
2 Tbl sp Chanadal (Split Chickpea)
1/4 Tsp Cooking soda
1 Tbl sp Chai ki patti(Tea)
4 Elaichi (Green Cardamom)
1 Large pc Dalchini (Cinnamon stick)
4 long (Clove)
1 Badi Elaichi (Black Cardamom )
1 Tej patta (Bay leaves)
1 Tsp salt
2 1/2 Cup water
1 Tsp oil

For Chole
1 Tbl sp Jeera (Cumin seed)
1 Tbl sp Sabud Dhania (Coriander seeds)
1 Tbl sp Anardana (Dry Pomegranate seeds)
1/2 Tsp Kali Mirch (Black pepper)
1 Tsp Kasuri Methi (Fenugreek leaves)
1/2 Tsp Ajwine (Carom seed)
1/2 Tsp Kala Namak (Black salt)
1/4 Tsp Amchur powder (Dry Mango powder)
1/4 Tsp Haldi powder (Turmeric powder)
2 Tsp Kashmiri Red chilly powder
1/2 Tsp Punjabi Garam Masala powder
1/2 Tsp Kitchen King Masala
3 to 4 Tbl sp oil
1 Tbl sp Deshi Ghee
1/2 Tsp Hing (Asafoetida)
2 Medium Size Onion paste(3/4 cup)
1/2 Tbl sp Lasun paste (Garlic paste)
1/2 Tbl sp Adrak paste
3 Medium Size Tomato paste(1 cup +3 Tbl sp)
1 Tsp salt
1 Cup Hot water

Tadka for Chole
2 Tbl sp Deshi Ghee
4 to 5 Lasun ki slice (Garlic slice)
8 to 10 Adrak Julienne (Garlic Julienne)
2 Hari Mirch ki long slice (Green chilli)
1/2 Tsp Kashmiri Red chilly powder

For Kulcha
1 1/2 cup Maida (Refined flour)
1/2 cup Room Temperature Milk
1/2 Tbl sp White Vinegar
or 1/2 Tbl sp Limboo ka ras (Lemon juice)
1 Tbl sp Chini powder (Sugar powder)
1/2 Tsp salt
2 Tbl sp oil
2 Tbl sp Milk powder
1 Packet ENO (Fruit salt)
1/4 cup Room Temperature Milk
Sprinkle Maida
Apply oil
Sprinkle Kala Til on dough
Finely chopped Dhania on dough
Apply Ghee

Lachha Pyaz
2 Medium Size Onion Round slice
1/2 Tsp Kashmiri Red chilly powder
1/2 Tsp Dhania powder (Coriander powder)
1/2 Tsp Chat Masala
1/2 Tsp Bhuna jeera powder (Roasted cumin powder)
1/4 Tsp Kala Namak (Black salt)
1/4 Tsp salt
2 to 3 Drop oil
Sprinkle Hara Dhania finely chopped (Green coriander leaves finely chopped)
Add Limboo ka ras (Lemon juice)
