Rava Idli are soft, steamed savory cakes made with semolina, spices, herbs and yogurt. It is a popular instant variation of the traditional South Indian Idli which is made with fermented rice and lentil batter.
The leavening ingredient to make these fluffy and light instant idli are baking soda or eno (fruit salt). Rava idli are also known as Suji Idli.

Rava Idli can be made as a quick breakfast or snack under 30 minutes. The rava idli batter gets done fast and then, as the idli is steaming, you can prepare the coconut chutney, which is the traditional dip to serve with idli.
In the suji idli batter, you can add veggies like grated carrots or beets, boiled green peas or corn kernels and also blanched cabbage or broccoli.
For a vegan version, use non-dairy yogurt like cashew yogurt, coconut yogurt or almond yogurt. If using baking soda, add ¼ teaspoon of it.
